Our specially selected olive oil was designed as a precise balance of flavour and nutrient density, with the freshness of our olives providing a naturally high polyphenol concentration. At the right angle the sun will reveal this bottle’s violet secret; our coveted Miron Violetglass bottles were selected for their unique ability to filter out sunlight, allowing in only ultraviolet and infrared wavelengths. With the naturally antimicrobial properties of this light, we can achieve true, long-term preservation of both flavour and freshness without any added preservatives. The Olives
Our olive oil is sourced from olive groves are in the Calabria region of southern Italy, here there is a large concentration of centuries-old olive trees and many defined as monumental due to their size and age. The olives grown there come from 40 hectares of groves, with different cultivars typical of the region, including, LECCINO, CICIARELLO, ROGGIANELLA and our favourites which are two varieties of cultivars, OTTOBRATICA and CAROLEA.
It is precisely from the union of the varieties CAROLEA, which gives an oil with a harmonious taste and OTTOBRATICA (Tonda di Filogaso) with a fruity taste, we obtain our organic oil.
The CAROLEA olive is rich in aromas, excellent consistency, greater presence of chlorophyll, green, harvesting begins in mid-November.
The OTTOBRATICA olive, intense presence of aromas with good presence of chlorophyll.
The harvest begins at the end of October. The degree of maturity of the olives marks the consistency and body of the oil and the utmost attention is paid during the harvesting phase.
